In this colligative properties lab, students drop the freezing point of ice using salt, and then use that to make ICE CREAM! This is by far, the most popular lab in my classes, and past students come by to reminisce about it all the time. It is great for a Friday, or just before a vacation, but also excellent to integrate into your Solutions Unit.
WHO IS IT FOR?
This lab can be used in one of two contexts:
- For first year chemistry students: a study of salts can cause freezing point depression
- COMING SOON: For physical science students: a study of heat flow
HOW TO USE IT
- I like to use this lab activity with my chemistry students at the end of the Solutions Unit, before a break or as a finale to the school year

WHAT MATERIALS ARE REQUIRED?
Per each student (can cut recipe in half)
- 1 cup of whole milk
- 1/4 cup of sugar or 1/4 cup of Nesquick powder
- 1/4 teaspoon of vanilla extract
- A ziplock sandwich bag
- A ziplock gallon bag
- Ice
- About 1/2 a cup of kosher or sea salt
- A bowl
- A spoon
- Ice cream toppings!
